Greek Yogurt Dip for Artichokes

I was formally a picky eater. I would eat chicken, bread and corn. And that was it pretty much. When my parents would ask me to try something, I would take the smallest nibble, smaller than an ant bite sort of nibble. When I hit the age of 26-ish I started broadening my taste-bud horizons and I have opened up to many new flavors that I can not believe I lived without.

One of my newest adventures is artichokes! I remember my parents loving these when I was a child. They both suggested I dip it in butter after cooking it but my mind couldn't go there. I couldn't wrap my head around dipping a veggie (thistle technically), in melted fat. I love butter! But not when I'm trying to watch my calorie intake. So I made a very simple dip that was PHENOMENAL! I'm sure you have the ingredients in your house right now! Here's the recipe:

Greek Yogurt Dip for Artichokes

  • 1 medium artichoke - cooked to your liking (I boil mine for 30 minutes)
  • 30g of non fat plain Greek yogurt
  • 10g of low fat mayo
  • A few dashes of Worcestershire
  • A splash of soy sauce
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

What you do:

Stir the Greek yogurt, mayo, sauces and seasonings in a small bowl until well combined.

You will see that I encourage you to tweak the recipe to your tastes, to your liking. Not all taste-buds are created the same! Do you like garlic, like a lot? Try adding minced fresh garlic. Do you like buffalo sauce? Try that! But this will help you create a base that you can grow yourself or your family into the perfect pairing for a meal.

You'll notice that I weigh my ingredients. I like to know the exact amount that I am eating when I'm macro counting. This is an off and on diet/lifestyle depending on my goals. I'll also switch back and forth on how I measure my ingredients. If you have questions on approximately how much I'm using, leave a comment and I'll let you know!

Substitution/Addition options:
Sour cream for Greek yogurt
Leave out the mayo
Love spice? Add cayenne pepper or red pepper flakes!

Happy Eating!
