Easy Roasted Garlic Broccoli

I have been the pickiest of eaters most of my life. There was a small category of food that I would eat and then, what felt like overnight, I wanted to try everything! Sushi, tofu, broccoli, salmon, eggs, tomatoes all of it was a whole new food world for me. You read the correctly, I did not eat those foods before and I love them now. There was a short stint where I was vegetarian and I learned so much about cooking vegetables. Broccoli ended up being one of my favorites. It's an easy side dish and it reheats well. This is my perfected broccoli side dish recipe.

Ingredients

2-3 broccoli crowns cup up into bite size pieces
3-4 tablespoons of extra virgin olive oil
2 tablespoons minced garlic
Garlic Powder
Salt
Red pepper flakes (optional for some kick!)

What you do:
Preheat oven to 425 degrees
Take chopped broccoli and toss in EVOO and garlic.
Spread out evenly on a baking sheet lined with foil. Season with salt, garlic powder, and red pepper flake. Toss on sheet and season again with seasonings
Place in oven for 15-25 minutes until the broccoli starts to brown and turn crispy

You can serve with chicken and rice, salmon, steak, tofu, whatever you'd like. I also like to experiment with infused olive oils. Arizona has the Queen Creek Olive Mill and they make all of their own olive oils and they are AMAZING. I subbed out a tablespoon of plain EVOO with their garlic flavor to intensify that garlic flavor. If you can't tell, I am a garlic lover so the more garlic, the better.

Substitutions: to make it a little healthier, you can use spray EVOO when you first lay it out on the baking pan. You still get the flavor without the calories. I've done that before, I've just noticed it doesn't crisp up quite as much if it was straight EVOO. But it still works.

I have made this for guests for dinner many times and there are never leftovers. People love this broccoli and it's so simple!
